Cheese production optimisation based on milk characterisation using photonics sensors
The OPT2CHEESE project consists of a pilot project for the use of a photonic sensor in the rapid characterisation of the milk received at Lácteos de Moeche (Manufacturing SME).
This sensor developed by ADVANCED OPTICAL TECHNOLOGIES will provide the nutritional values of the milk that will allow a better adjustment of the cheese production parameters, optimising the process by acting on the curdling temperature, cutting time and draining time.
